Our Cooking Classes
Our Master Class starts with a visit to the Central de Abastos Market. Strolling up and down the colorful aisles full of vendors, our students get a first hand look at what local farmers and producers offer.
You will learn about many fruits, vegetables, and spices, unique to our culture, and use them to prepare a four-course “comida” (which is our dinner eaten around 2pm), that Oaxacan’s drop everything to enjoy. After our class you will be able to identify these local ingredients by sight, smell, and taste and be able to confidently shop for them on your own.
Coming back from the market, we will slice and dice what we just bought and prepare four or five traditional dishes, including one mole or main dish (guisado), a soup (sopa), a salsa, a salad (ensalada) and a dessert (postre).
And finally, after an exciting and stimulating class, we all sit down to eat and enjoy the fruits of our labor. Strangers become friends and friends become family as we sit around the table with the same food the indigenous tribes of Oaxaca ate so many centuries ago.
An experience of a lifetime!
